- nonstick cooking spray
- 10 oz ground plant meat
- 2 tsp taco seasoning (click for recipe)
- ½ cup crushed tomatoes
- ⅓ cup Mexican shredded cheese blend or vegan cheese
- ¼ cup diced canned jalapeño chile peppers
- ¼ cup scallions chopped
- 2 tbsp fresh cilantro chopped
- Salsa Mexicana (click for recipe)
- Guacamole Cabo Style (click for recipe)
- small drizzle of vegan plain yogurt for decoration
Instructions
- Preheat oven to 375°F.
- Transfer the chips to an ovenproof serving dish and spread the beans evenly on top.1 bag tortilla chips, 2 cups canned black beans
- In a skillet drizzled with olive oil, cook the plant meat with the taco seasoning over medium-high heat.10 oz ground plant meat, 2 tsp taco seasoning
- When the plant meat is just slightly pink, add the tomatoes and reduce the heat to simmer.½ cup crushed tomatoes
- Simmer for approximately 5 minutes, or until any liquid is cooked off.
