Instructions
Preheat oven to 375°F.
Transfer the chips to an ovenproof serving dish and spread the beans evenly on top.
1 bag tortilla chips, 2 cups canned black beans
In a skillet drizzled with olive oil, cook the plant meat with the taco seasoning over medium-high heat.
10 oz ground plant meat, 2 tsp taco seasoning
When the plant meat is just slightly pink, add the tomatoes and reduce the heat to simmer.
½ cup crushed tomatoes
Simmer for approximately 5 minutes, or until any liquid is cooked off.
Spread the taco flavored plant meat over the beans.
Next, sprinkle the diced jalapeños and cheese.
¼ cup diced canned jalapeño chile peppers, ⅓ cup Mexican shredded cheese blend
Bake for approximately 5 minutes, or until the cheese is melted and the jalapeños are fragrant.
Layer with fresh scallions, cilantro, Salsa Mexicana, guacamole and vegan yogurt or sour cream.
