- 2 zucchini cubed
- 6 oz fresh spinach
- 16 oz peas fresh or frozen
- ½ white onion diced
- 32 oz vegetable broth
- 3 cloves garlic minced
- 4 tbsp olive oil
- ¼ tsp chili flakes
- 1 lemon zested and juiced
- 1 handful fresh, organic basil
- ½ cup almond milk frothed
- 1 tsp salt
- ½ tsp pepper
- Calabrian Chilies for garnish
- Parmesan cheese for garnish
- your favorite pasta cooked according to package directions
Instructions
- Using a large pot or Dutch oven place olive oil, onion, garlic, chili flakes, salt and pepper, and sauté until onions are translucent.½ white onion, 3 cloves garlic, 4 tbsp olive oil, ¼ tsp chili flakes, 1 tsp salt, ½ tsp pepper
- Add zucchini and a splash of vegetable broth. Cover the pot and let steam for about ten minutes.2 zucchini
- Add the remaining vegetable broth and bring to a light simmer. Next, add peas and spinach, and let simmer for about ten minutes.16 oz peas, 32 oz vegetable broth, 6 oz fresh spinach
- Remove from heat and let cool. Add basil and fresh lemon juice. Then place into a blender or use an immersion blender and blend until smooth and creamy.1 handful fresh, organic basil, 1 lemon
