I have tested several different different green pasta sauce recipes and I finally settled on this, but it was inspired by my dear friends, the Vela family, an amazing Italian family who host the most beautiful dinner parties! My dear friend Giorgia Vela made a beautiful green pasta sauce for us one night and it was out of this world crazy delicious! I was truly inspired by Giorgia to make something similar to her recipe because it was phenomenal. Giorgia’s recipe includes peas and potatoes. I’ve changed it up by swapping the potatoes with more “green goodness” by way of fresh zucchini and spinach. Any way you look at it; you cannot go wrong with a green pasta sauce loaded with nature's goodness of vitamins, minerals, and flavor! Enjoy!
