Vegan Caesar Salad

There’s something so satisfying about a good Caesar salad — it’s crisp, creamy, tangy, and comforting all at once. This vegan version has all that and more. It’s made with my signature Vegan Caesar Dressing, homemade crunchy croutons, and plenty of fresh Romaine. It’s one of those recipes that feels restaurant-level but takes just minutes to make in your own kitchen.
The best part? This Caesar is totally dairy-free and packed with nutrients. Romaine is rich in vitamin K (essential for bone health), and the fresh lemon juice adds a boost of vitamin C. Ingredients
- 1 head organic Romaine lettuce
- 1 cup Christine's Homemade Croutons click for recipe
- ½ cup vegan Parmesan cheese
- ½ cup Christine’s Vegan Caesar Dressing click for recipe
- fresh lemon juice
- salt and pepper to taste
Instructions
- Wash and pat dry Romaine lettuce. Slice lettuce into medium sized ribbons, place in a strainer and wash again. Next, place lettuce in a salad spinner to remove excess water and debris.
- Place lettuce into your favorite large salad bowl - toss with Christine’s Vegan Caesar Dressing and fresh croutons. Top with vegan Parmesan cheese, lemon juice and salt and pepper to taste. Garnish with lemon wedges.
