Vegan Caesar Salad

Crisp, crunchy, and totally crave-worthy… this Vegan Caesar Salad is a must-make! Loaded with my homemade croutons, a sprinkle of vegan Parmesan, and a drizzle of my super creamy Vegan Caesar Dressing, this salad brings all the flavor without the dairy. Plus, the Romaine lettuce is packed with Vitamin K—super important for keeping those bones strong, especially for women over 50.Whip this up for lunch or dinner and thank me later!
Equipment
- salad spinner
- large salad bowl
Ingredients
- 1 head organic Romaine lettuce
- 1 cup Christine's Homemade Croutons click for recipe
- ½ cup vegan Parmesan cheese
- ½ cup Christine’s Vegan Caesar Dressing click for recipe
- fresh lemon juice
- salt and pepper to taste
Instructions
- Wash and pat dry Romaine lettuce. Slice lettuce into medium sized ribbons, place in a strainer and wash again. Next, place lettuce in a salad spinner to remove excess water and debris.
- Place lettuce into your favorite large salad bowl - toss with Christine’s Vegan Caesar Dressing and fresh croutons. Top with vegan Parmesan cheese, lemon juice and salt and pepper to taste. Garnish with lemon wedges.
