You only need 5 ingredients and 5 minutes to whip up this smoky, banana-based frozen treat—and let’s just say, Tracey Bregman and I had way too much fun making it!
It’s bold. It’s creamy. It’s got that coffeehouse-meets-campfire vibe—thanks to cowboy coffee, smoky sea salt, and sweet bananas. We laughed, snacked, joked our way through the entire thing… and still managed to not eat it all before filming the final shot (barely).
This one’s for coffee lovers, banana fans, and anyone who wants a healthy dessert that feels indulgent but totally isn’t.

Why This Vegan Cowboy Coffee Ice Cream Loves You Back

1. Bananas
These naturally sweet gems are loaded with potassium and fiber. They support healthy digestion and help regulate blood pressure—plus they give the ice cream that soft-serve texture without added sugar or dairy.

2. Coffee & Cinnamon
Coffee boosts alertness, while cinnamon helps stabilize blood sugar and may improve insulin sensitivity. A great combo for supporting mood and metabolism as hormones shift.

3. Smoky Sea Salt
This unexpected twist brings serious flavor with just a pinch. Smoked salt adds that “campfire” essence while enhancing all the other ingredients. It’s also rich in trace minerals.

4. Instant Decaf Coffee + Cowboy Coffee
Using both creates layers of flavor—bold and robust, but without overstimulating your system (because we’re not out here trying to spike cortisol before bed!).
