Ingredients

  • 3 large sweet potatoes peeled and cubed
  • 1 tbsp brown sugar
  • ½ cup pineapple tid bits
  • ½ cup shredded coconut
  • 1 tsp cinnamon
  • 1 pinch sea salt
  • ½ cup pecans rough chopped
  • 2 cups marshmallows

Instructions

  • Preheat the oven to 400℉
  • Place cubed sweet potatoes in a large saucepan and fill halfway with water.
  • Cover pot and bring water to a boil. Cook until sweet potatoes are fork tender, about 10 minutes.
  • Drain potatoes and return to pot. Use a potato masher or potato ricer to mash the sweet potatoes until smooth.
  • Add brown sugar, pineapple, pecans, coconut, cinnamon and salt.
  • Transfer to a baking dish top with marshmallows.
  • Bake for 10 – 15 minutes or until marshmallows are toasted. Remove from oven and allow casserole to cool for about 10 minutes before serving.

With some recipes the health qualities of the ingredients are more important than the calories. This recipe replaces the usual sweet potato casserole loaded with butter, brown sugar and maple syrup.
