This is my simple broiled salmon recipe basted in champagne vinaigrette, topped with pomegranate.
I love it because it’s so fast and so easy to make yet loaded with delicious flavor.

  • Preheat your oven to broil.
  • Coat a large baking sheet with olive oil.

  • Place salmon skin side down on the baking sheet.
    2 lbs salmon filet
  • Brush the champagne vinaigrette all over salmon.
    ¼ cup Christine‘s champagne vinaigrette
  • Broil for 12 minutes or until cooked to your desired temperature
  • Sprinkle pomegranate and fresh parsley over top and serve immediately.
    ¼ cup pomegranate arils (seeds), Fresh parsley
