This Dijon Honey Vinaigrette is packed with goodness! Dijon mustard adds a punch of antioxidants, honey provides natural sweetness and antibacterial properties, while olive or avocado oil delivers heart-healthy fats.

Ingredients
 
 

  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • ¼ cup champagne vinegar
  • ½ cup extra-virgin olive oil, or Avocado Oil
  • 2 tbsp Italian parsley coarsely chopped
  • Salt and Pepper to taste

Instructions
 

  • Using a metallic bowl, combine Dijon, honey, vinegar, and whisk until combined.
    1 tbsp Dijon mustard, 1 tsp honey, ¼ cup champagne vinegar
  • Next, slowly drizzle the oil into the dressing while whisking vigorously.
    ½ cup extra-virgin olive oil, or Avocado Oil
  • Add Italian parsley and season with salt and pepper.
    2 tbsp Italian parsley, Salt and Pepper

Champagne vinegar offers a dose of acetic acid. Italian parsley adds vitamins A and K. Together, they create a nutrient-rich elixir for your body. This is one of my absolute favorite dressings of all time! And it is so versatile.
Tips
If you don’t have champagne vinegar, you can use white wine vinegar, and it will taste just as good!
This dressing will keep in the refrigerator for up to one week. It can be used for a salad dressing or to marinate fish. I like to use it in my broiled salmon recipe!
