They are my go-to when I want a festive, no-fuss dessert that looks adorable and tastes even better. Whether you’re hosting for the 4th of July, a backyard BBQ, or just want a healthy sweet treat in your freezer… this recipe delivers.

It’s technically not ice cream (yogurt is our creamy base!), but I promise you won’t miss it. The cashew yogurt keeps it light and tangy, and the dark chocolate coating adds the perfect decadent snap. I love using a star-shaped mold for holidays, but really any silicone mold will work.

Get ready for your 4th of July celebrations with these festive and easy-to-make ice cream bites! Perfectly delightful and packed with health benefits, especially for women over 50. I love this recipe because it’s so simple and easy! And while it is not technically “ice cream”, I do believe that using yogurt is a fun, easy, fast and healthy way to make a delicious frozen dessert!

Equipment

  • Baking Sheet
  • Parchment Paper
  • decorative ice cube tray or silicone mold (For this recipe, I used star-shaped ice cube molds.)

Ingredients
  

  • 20 oz vanilla cashew yogurt
  • ½ cup blueberries smaller berries work best
  • ½ cup raspberries gently chopped but not crushed
  • 1 cup 70% dark chocolate chips
  • 1 tbsp coconut oil used for dipping the chocolate
  • ¼ cup crushed peanuts for topping optional

Instructions
 

  • Prepare a small baking sheet covered with parchment paper and set aside.
  • Combine yogurt and berries and gently mix together trying not to break apart the raspberries.
    ½ cup blueberries, ½ cup raspberries, 20 oz vanilla cashew yogurt
  • Carefully place into a decorative ice cube tray or silicone mold and fill each mold to the top. Wiping clean around the edges of each mold. (For this recipe, I used star-shaped ice cube molds.)
  • Freeze for at least two hours or until solid.
  • Melt dark chocolate with coconut oil at 30-second intervals, stirring between each interval, until melted but not scorching hot.
    1 cup 70% dark chocolate chips, 1 tbsp coconut oil
  • Release the ice cream bite from the ice cube tray onto parchment paper and dip each of them into the dark chocolate using a slotted spoon. Place each ice cream bite back on to the small baking sheet covered with parchment paper to let the chocolate dry.
  • Immediately sprinkle with sea salt, red white blue sprinkles, dried rose petals or your favorite sprinkle decoration. Note- the chocolate dries rapidly- you must decorate quickly after dipping into the chocolate.
    ¼ cup crushed peanuts for topping
  • Place back into the freezer for at least 20 more minutes or until ready to serve.
