Get ready for your 4th of July celebrations with these festive and easy-to-make ice cream bites! Perfectly delightful and packed with health benefits, especially for women over 50. I love this recipe because it’s so simple and easy! And while it is not technically “ice cream”, I do believe that using yogurt is a fun, easy, fast and healthy way to make a delicious frozen dessert!

20ozvanilla cashew yogurt
½cupblueberriessmaller berries work best
½cupraspberriesgently chopped but not crushed
1cup70% dark chocolate chips
1tbspcoconut oilused for dipping the chocolate
¼cupcrushed peanuts for topping optional

Instructions
Prepare a small baking sheet covered with parchment paper and set aside.
Combine yogurt and berries and gently mix together trying not to break apart the raspberries.
½ cup blueberries, ½ cup raspberries, 20 oz vanilla cashew yogurt
Carefully place into a decorative ice cube tray or silicone mold and fill each mold to the top. Wiping clean around the edges of each mold. (For this recipe, I used star-shaped ice cube molds.)
Freeze for at least two hours or until solid.
Melt dark chocolate with coconut oil at 30-second intervals, stirring between each interval, until melted but not scorching hot.
1 cup 70% dark chocolate chips, 1 tbsp coconut oil
Release the ice cream bite from the ice cube tray onto parchment paper and dip each of them into the dark chocolate using a slotted spoon. Place each ice cream bite back on to the small baking sheet covered with parchment paper to let the chocolate dry.
Immediately sprinkle with sea salt, red white blue sprinkles, dried rose petals or your favorite sprinkle decoration. Note- the chocolate dries rapidly- you must decorate quickly after dipping into the chocolate.
¼ cup crushed peanuts for topping
Place back into the freezer for at least 20 more minutes or until ready to serve.
