Every time I’m in Cabo, there’s one drink I always order—the Strawberry Basil cocktail at Toro. It’s bright, herbaceous, and wildly refreshing. Traditionally, it’s made with vodka… but honestly? I’ve discovered it’s just as delicious without it.

This mocktail version keeps everything I love about the original—the juicy strawberries, the aromatic basil, the pop of lime—while swapping in coconut water for a hydrating, lighter finish. It’s the kind of drink you make once and then keep on repeat all summer long.

How I Make It

I start by adding the strawberries, basil, lime juice, and strawberry simple syrup directly into a pretty glass. Using a muddler (or the back of a spoon), I gently muddle everything together for about a minute—just enough to release the juices and basil oils without pulverizing them.

Next, I pour in the coconut water and give it a gentle stir. Add ice, stir once more, and finish with a fresh strawberry or lime slice if you’re feeling fancy. That’s it—fresh, light, and incredibly refreshing.

  • 1 cup coconut water
  • ice
  • Fresh Strawberries and Lime for garnish

Instructions
 

  • Muddle the strawberries, basil, lime, and strawberry syrup in a pretty glass for about one minute.
    3 med strawberries, 4-6 basil leaves, 1 tbsp lime juice, 1 tsp strawberry simple syrup
  • Top with coconut water and stir gently. Add ice and stir again.
