  • ¼ cup hot water about 175°F / 80°C — not boiling
  • 1 tsp dragon fruit powder
  • 1 tsp sugar or sweetener of choice
  • ½ cup coconut cream chilled
  • ½ cup coconut milk unsweetened
  • ice

Instructions
 

Prepare the matcha (Traditional Method)

  • Sift the matcha powder through a fine mesh sieve into a small bowl (to prevent clumping).
    1 tsp matcha powder
  • Heat water to about 175°F / 80°C — just below boiling.
    ¼ cup hot water
  • Add the hot water to the matcha.
  • Using a bamboo whisk (chasen), whisk vigorously in a quick “M” or “W” motion until the matcha is dissolved and a light foam forms (20–30 seconds).
  • No whisk? Try this: Place the matcha and hot water in a small jar with a lid or a blender. Shake or blend until smooth and slightly frothy.

Make the pink cloud

  • In a medium bowl, combine coconut cream, dragon fruit powder, and sugar.
    1 tsp dragon fruit powder, ½ cup coconut cream, 1 tsp sugar
  • Whip with a hand whisk, milk frother, or handheld mixer for 1–2 minutes until a fluffy, airy foam texture forms.

Assemble the drink

  • Fill a tall glass with ice.

  • Slowly add the prepared matcha, letting it layer over the milk.
