Enter: Dark Chocolate Strawberry Energy Bites — my little superhero snacks that take 15 minutes to throw together and somehow make me feel like I’ve got my life in order. That’s why me (the Healthy Chef) and my good friend Tracey Bregman (The Lazy Cook) got together to create these incredible dark chocolate strawberry energy bites!

These bites are soft, chewy, lightly sweet, and have that rich dark chocolate–strawberry combo that tastes suspiciously like dessert. But don’t be fooled… every little bite is packed with fiber, omega-3s, whole grains, healthy fats, and no refined sugar. It’s giving breakfast meets treat, in the best possible way.

These no-bake energy bites are my go-to for busy days when I need a quick, clean source of fuel. Packed with fiber, healthy fats, and a hint of dark chocolate — they’re the perfect grab-and-go snack that tastes like dessert but fuels like breakfast. No oven, no fuss — just wholesome goodness in every bite!

Ingredients
  

  • 1 cup old-fashioned oats
  • ½ cup natural peanut butter
  • ½ cup pure maple syrup
  • cup dark chocolate chips 70% cocoa
  • ¼ cup flaxseed meal
  • ¼ cup chia seeds
  • ¼ cup freeze-dried strawberries, roughly chopped plus extra for topping
  • ¼ cup organic unsweetened coconut flakes for coating
  • 1 tsp vanilla extract

Instructions
 

Mix it up:

  • In a large mixing bowl, combine oats, peanut butter, maple syrup, dark chocolate chips, flaxseed meal, chia seeds, roughly chopped freeze-dried strawberries, and vanilla extract. Stir until the mixture is evenly combined and sticky.
    1 cup old-fashioned oats, ½ cup natural peanut butter, ½ cup pure maple syrup, ⅓ cup dark chocolate chips, ¼ cup flaxseed meal, ¼ cup chia seeds, ¼ cup freeze-dried strawberries, roughly chopped, 1 tsp vanilla extract

Shape:

  • Using a small ice cream scoop or melon baller, portion the mixture into equal amounts. Roll each scoop between your hands to form a smooth 1-inch ball.

Coat:

  • Place the coconut flakes in a shallow bowl or small plate. Roll each energy bite in the coconut flakes to lightly coat the outside. Then, dip the top of each bite into a separate small bowl of crushed freeze-dried strawberries for a pink, fruity finish.
    ¼ cup organic unsweetened coconut flakes

Set:

  • Arrange the coated bites on a parchment-lined baking sheet. Freeze for 30–40 minutes, or until firm.

Store & Enjoy:

  • Transfer to an airtight container. Store in the refrigerator for up to 1 week or freeze for up to 2 months.
