In a large mixing bowl, combine oats, peanut butter, maple syrup, dark chocolate chips, flaxseed meal, chia seeds, roughly chopped freeze-dried strawberries, and vanilla extract. Stir until the mixture is evenly combined and sticky.
1 cup old-fashioned oats, ½ cup natural peanut butter, ½ cup pure maple syrup, ⅓ cup dark chocolate chips, ¼ cup flaxseed meal, ¼ cup chia seeds, ¼ cup freeze-dried strawberries, roughly chopped, 1 tsp vanilla extract
Shape:
Using a small ice cream scoop or melon baller, portion the mixture into equal amounts. Roll each scoop between your hands to form a smooth 1-inch ball.
Coat:
