Hearty, Protein-Packed Plant-Based Burgers

I love a good veggie burger, but it has to be hearty, flavorful, and sturdy enough to hold all my favorite toppings. No dry, crumbly patties allowed!

These homemade plant-based burgers are packed with black beans, brown rice, deeply browned mushrooms, oats, and savory seasonings. They turn beautifully crisp and golden on the outside while staying tender and satisfying on the inside.

A little barbecue sauce, smoked paprika, vegan Worcestershire sauce, and umami seasoning give them that classic burger-shop flavor I crave. And once I add a generous spoonful of my creamy burger sauce, these burgers become completely irresistible.

I love serving them on toasted pretzel buns with lettuce, juicy tomatoes, red onion, avocado, and pickles. For a lighter meal, I’ll skip the bun and crumble a patty over greens and vegetables for a hearty burger bowl.

Why I Love These Plant-Based Burgers

These burgers are hearty enough to satisfy even the serious burger lovers in my family. The black beans and brown rice give them substance, the mushrooms add rich savory flavor, and the flaxseed and oats help everything hold together.

I also love that I can prepare the patties ahead of time and keep them chilled until I’m ready to cook. They freeze beautifully too, making them perfect for meal prep or busy weeknight dinners.

They are:

  • Crisp and golden on the outside
  • Tender and hearty on the inside
  • Filled with plant-based protein and fiber
  • Sturdy enough for buns and toppings
  • Easy to prepare ahead of time
  • Freezer-friendly
  • Delicious in burger bowls, lettuce wraps, or toasted buns

Plant-Based Nutrition for Women Over 50

I’m always thinking about how I can add more protein, fiber, and nutrient-dense ingredients to my meals without sacrificing flavor or satisfaction.

Black beans provide plant-based protein and fiber, which can help support digestive health, steady energy, and lasting fullness. Brown rice and oats contribute complex carbohydrates, while ground flaxseed adds fiber and plant-based omega-3 fatty acids.

Protein becomes especially important as we age because it helps support and maintain lean muscle mass. Pairing these burgers with colorful vegetables, leafy greens, avocado, or a crunchy side salad creates a balanced meal filled with a variety of nutrients.

My Secret to Veggie Burgers That Hold Together

The key to a great homemade veggie burger is controlling the moisture.

I pat the black beans dry before adding them to the mixture, and I cook the mushrooms until they have released their liquid and become deeply browned. I also let the finished mixture rest so the oats have time to absorb any remaining moisture.

Once I shape the patties, I refrigerate them for at least 30 minutes. This step helps them firm up and hold together beautifully when they hit the skillet.

Don’t skip the chilling time—it really does make a difference!

For Cooking

  • 1 to 2 tbsp olive oil

  • Thinly sliced red onion
  • Sliced avocado
  • Pickles
  • Vegan Cheese
  • Additional barbecue sauce

Instructions

Step 1: Prepare the Flax Egg

  • In a small bowl, combine the ground flaxseed and water. Stir the mixture well and let it rest for approximately 10 minutes, or until it becomes thick and gel-like.
2 tbsp ground flaxseed, 5 tbsp water

Step 2: Cook the Onion and Mushrooms

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
    1 tbsp olive oil
  • Add the diced onion and chopped mushrooms and cook them for 8 to 10 minutes, stirring occasionally. Continue cooking until the mushrooms have released their moisture and become deeply browned.
1 sm yellow onion, 8 ounces cremini or Baby Bella mushrooms
  • Add the minced garlic and cook for another 30 seconds.
    1 clove garlic
  • Remove the skillet from the heat and allow the mushroom mixture to cool completely before combining it with the remaining ingredients.

Step 3: Combine the Burger Ingredients

  • Transfer the cooled mushroom mixture to the bowl of a stand mixer fitted with the paddle attachment.
  • Add the black beans, brown rice, quick oats, flour, prepared flax egg, vegan Worcestershire sauce, barbecue sauce, smoked paprika, umami seasoning, sea salt, and black pepper.
1 15 ounce can black beans, 1 cup cooked brown rice, ½ cup quick oats, ⅓ cup all-purpose flour, 1 tbsp vegan Worcestershire sauce, 2 tbsp barbecue sauce, 2 tsp smoked paprika, 1 tsp Trader Joe's Umami Seasoning, ½ tsp sea salt, ¼ tsp freshly ground black pepper

Step 4: Mix the Burger Mixture

  • Mix everything on low speed until the ingredients are evenly combined.
  • I like to leave some texture from the beans, rice, and mushrooms rather than mixing everything into a completely smooth paste.
  • The mixture should hold together when I press a small amount between your fingers.

Step 5: Allow the Mixture to Rest

  • Allow the burger mixture to rest for 10 minutes so the oats can absorb any excess moisture.
  • If the mixture still feels too wet to shape, add another 1 to 2 tablespoons of quick oats.

Step 6: Shape the Patties

  • Using a large ice cream scoop, portion the mixture into 10 equal-sized mounds and place them on a parchment-lined baking sheet.
  • Gently flatten each mound with my hands to form a patty approximately ¾-inch thick.

Step 7: Chill the Burgers

  • Refrigerate the shaped patties for at least 30 minutes. This helps the burgers become firmer and prevents them from falling apart while they cook.

Step 8: Cook the Burgers

  • Heat 1 to 2 tablespoons of olive oil in a large skillet over medium heat.
1 to 2 tbsp olive oil
  • Working in batches when necessary, cook the burgers for 4 to 5 minutes per side, or until they are golden brown, crisp on the outside, and heated through.
  • Avoid moving the patties too soon. Allowing the first side to develop a good crust makes them much easier to flip.

Step 9: Make Christine’s Burger Sauce

  • While the burgers are cooking, whisk together the vegan mayonnaise, yellow mustard, dill relish, and prepared horseradish or Tabasco sauce in a small bowl.
2 tbsp vegan mayonnaise, 1 tbsp yellow mustard, 2 tsp dill relish, 1 tsp prepared horseradish or a few dashes or Tabasco sauce
  • Taste the sauce and add a little more horseradish or hot sauce when I want an extra kick.

Step 10: Assemble and Serve

  • Serve the burgers on toasted pretzel buns with Christine’s Burger Sauce and all your favorite toppings.
Toasted pretzel buns, Crisp Lettuce, Sliced Tomatoes, Thinly sliced red onion, Sliced avocado, Pickles, Vegan Cheese, Additional barbecue sauce
  • For a lighter option, serve the patties in lettuce wraps or crumble them over leafy greens with tomatoes, avocado, red onion, pickles, and extra vegetables.

Christine’s Healthy Cooking Tips

Pat the Black Beans Dry
After rinsing the black beans, I pat them thoroughly with a clean kitchen towel or paper towels. Removing excess water helps prevent a soft or overly wet burger mixture.
Brown the Mushrooms Well
I don’t rush the mushrooms. I cook them until their moisture has evaporated and they are deeply browned. This gives the burgers a rich, savory flavor while preventing excess liquid from making the patties fall apart.
Cool the Vegetables Completely
I let the mushroom and onion mixture cool completely before adding it to the remaining ingredients. Warm vegetables can soften the mixture and make the patties more difficult to shape.
Don’t Overmix the Burgers
I mix the ingredients only until they hold together. Leaving some visible pieces of black beans, mushrooms, and brown rice gives the burgers a heartier and more satisfying texture.
Adjust the Moisture as Needed
The moisture level can vary depending on the beans, rice, mushrooms, and barbecue sauce I use. If the mixture feels too wet, I add 1 to 2 tablespoons of oats. If it feels unusually dry, I add a small spoonful of barbecue sauce or water.
Use an Ice Cream Scoop
A large ice cream scoop helps me portion the mixture evenly so all the burgers are a similar size and cook at the same rate.
Chill Before Cooking
I refrigerate the patties for at least 30 minutes before cooking. This gives the oats and flaxseed time to bind the mixture and helps the burgers maintain their shape.
Wait Before Flipping
I let the first side become golden and crisp before attempting to flip the burger. If the patty is sticking to the skillet, it usually needs another minute to develop its crust.
Cook in Batches
I avoid overcrowding the skillet. Leaving space around each burger helps the edges become crisp instead of steaming.
Make Them Without a Stand Mixer
When I don’t want to use a stand mixer, I lightly mash the black beans with a potato masher or large fork. I then add the remaining ingredients and mix everything together with a wooden spoon or clean hands.
Make Them Gluten-Free
To make these burgers gluten-free, I use certified gluten-free oats and a cup-for-cup gluten-free flour blend.
I also check the labels on the Worcestershire sauce, barbecue sauce, umami seasoning, and buns because these ingredients can sometimes contain gluten.

Chef’s Note

I love serving these burgers on toasted pretzel buns with all the classic fixings—crisp lettuce, juicy tomato slices, thinly sliced red onion, creamy avocado, crunchy pickles, and a generous smear of Christine’s Burger Sauce.

The creamy, tangy sauce brings all the flavors together and gives these homemade burgers that classic burger-shop finish.

Storage and Reheating

I store cooked burgers in an airtight container in the refrigerator for up to four days.

For the best texture, I reheat the patties in a lightly oiled skillet over medium-low heat until they are warmed through and crisp again on the outside. They can also be reheated in an air fryer or toaster oven.

The microwave works in a pinch, but the burgers will be softer and won’t have the same crisp exterior.

Freezing Instructions

These burgers freeze beautifully.

I place the cooked or uncooked patties in an airtight freezer-safe container, separating each layer with parchment paper. I freeze them for up to two weeks.

For the best results, I thaw the patties overnight in the refrigerator before cooking or reheating them.

When freezing uncooked patties, I make sure they are well chilled and firm before transferring them to the freezer container.

Final Thoughts

I believe a really good veggie burger should feel just as hearty and satisfying as a traditional burger, and this recipe absolutely delivers.

The black beans and brown rice create a substantial base, the browned mushrooms add incredible savory flavor, and the flaxseed and oats help the patties hold together beautifully. The smoky seasonings and barbecue sauce give every bite that classic burger flavor I love.

I like to prepare a full batch, enjoy a few for dinner, and place the extras in the refrigerator or freezer for another day. Whether I serve them on toasted pretzel buns, wrap them in lettuce, or crumble them into a colorful burger bowl, they make plant-based eating feel comforting, easy, and completely delicious.
