Using a small sauce pan set stove to medium heat. Next add water, sugar, salt, lemon and strawberries.
Bring to a low boil and let it simmer for about five minutes until sugar is fully heated and the strawberry flavor is infused into the liquid. *It is important to not mash the strawberries. Let them just simmer and boil. You do not want the seeds to release from the berries and get into your liquid. It will make the liquid cloudy.*
Let it cool for 20 to 30 minutes. Once cooled, strain the berries through a mesh strainer into an airtight container and store in the refrigerator for 2 to 3 weeks.
You can also pour the strawberry simple syrup into an ice cube tray and freeze for one to two months to use in your favorite cocktails and mocktails.
